Description:

Featured in Taste Magaain Summer 2012 issue and Tiki Cocktails brochure, this drink take a culinary approach with the use of strawberry rhubarb cordial.

INGREDIENTS

3 Cup - Red wine, zinfandel, or primitivo (for strawberry rhubarb cordial)
7 Ounce - Ripe strawberries, cut into bite-size pieces (for strawberry rhubarb cordial)
7 Ounce - Ripe rhubarb, cut into bite-size pieces (for strawberry rhubarb cordial)
1 Cup - Vodka (for strawberry rhubarb cordial)
1.5 Ounce - Mezcal
0.75 Ounce - Lime juice
3 Ounce - Chilled ginger beer


DIRECTIONS

1. To make Strawberry Rhubarb cordial: Soak the fruit in red wine for 72 hours in the fridge. Blend all ingredients together well. Strain several times until it's free of debris. Measure and record the volume of liquic, add the same volume of cane or white sugar. Heat the liquid in a pot to warm but do not boil. Add the sugar while whisking. The liquid should be warm enough to dissolve the sugar. Allow to cool completely and then add vodka. Pour into bottles and refrigerate for up to 3 months.
